Achari pyaz parantha : Breakfast recipe
Hello my blog members! Today going to share a parantha recipe which is very tasty and delicious.
Lets begin the recipe!
Ingredients reqd:
1.Onion-2 (small size)-chopped finely.
2.Chickpea flour(Besan)-3/4 cup
3.Curry leaves-6-7
4.Ginger -1 inch( grated)
5.Masalas reqd: salt( as per taste),black onion seed, saunf( fennel seeds), cumin seeds, red chilli powder, turmeric powder, heeng.
6.Atta( wheat flour )-2 cups( big)
7.Oil for cooking the stuffing.
8.Ghee / oil for parantha
Preparation : ( Time taken: 20-25 mins)-Serves 3 people.
For stuffing:
1.Heat the oil in a pan and add jeera, kalonji seeds, fennel seeds, heeng, curry leaves and chopped onions,add the chickpea flour and roast it till golden brown.
2.It will take 10 mins to roast the besan. After its roasted well take the mixture and keep it aside and let it cool.
3.Add the grated ginger for flavour.
4.Now take the atta and make the soft dough as we make for chapati.
5.Now take one dough ball and spread it evenly and take some mixture and place it in between the dough ball and roll it by spreading the mixture well.
6.Now the stuffed parantha is cooked well on the hot tawa while adding ghee / oil from the top and cooked till we get brown spots on both the sides.
7.Our achari besan paratha is ready to be served with curd/chutney.
8.It's called achari because the masala we use are the spices we use in pickles: salt, kalonji, saunf, methi( if available ), jeera.

If you don't like onion( pyaz) then just make the stuffing with besan alone it will also be tasty.
