Veg kofta recipe: Recipe for guests!
Hello friends🙏🏻 Welcome to today's blog. I am going to share veg kofta recipe.
So do you also get confused what to cook when guests come for lunch / dinner.
This is the easiest recipe with vegetables.
Let's get started..
Ingredients needed:
For koftas:
1.Veggies: cauliflower/cabbage/onion/green peas / potatoes. ( depends on qty), ginger.
2.Besan/ Gram flour-1/2 cup.
3.Paneer- for binding.
3.Masalas : salt, red chilli powder, turmeric powder, coriander powder, garam masala, kitchen king masala, jeera seeds.
For gravy:
1.Onion -1 ( big size), Tomatoes-2-3, green chilli, coriander leaves, ginger.
Khada Masalas : bay leaf, elaichi, laung(cloves), black pepper corns, dried red chilli.
Curd-2-3 tsps.
The Masalas will be same as the kofta.
Procedure :
It has three steps:
1.Make the kofta balls.
2.Deep fry them
3.Make the gravy for the kofta.
1.For the kofta, you can chop the veggies in chopper.
2.Now add some salt to the veggies and keep them aside so that it retains the extra moisture.
3.The veggies should be dry. Add panner, gram flour/ besan and make balls out of it. If you see that you are not able to bind, add more besan. Add the Masalas.
4. Now add oil in a kadai and deep fry them. You have to keep the flame slow- medium and fry so that the koftas cook evenly.
5.Now its time to make gravy.
6.Take a mixer grinder, add onion, tomatoes, green chilli and khada masalas.
7.Grind the mixture finely.
8.Take a non-stick pan, add oil and jeera seeds. Now add bay leaf and dried red chilli.
9.Add the mixture and cook it well till it releases oil.Add the normal Masalas ( red chilli, turmeric , coriander powder, garam msala ).
10. Add water and cook for 5 mins. Now add the koftas and let them cook. You can adjust the consistency of the gravy.Add curd and stir it continuously.
11. Garnish the kofta gravy with coriander leaves.
Our kofta gravy is ready. Serve it to the guests.
You can serve it with roti/ naan/ rice.

You must dry the veggies before making balls because it won't bind properly and it will splutter in oil.
