Coconut rice : Variety rice recipe
Hello readers🙏🏻 Hope you all are doing well. Today I am going to share a variety rice recipe which is "coconut rice". Coconut rice is a light, super delicious recipe. Well I completed my schooling in tamilnadu and we lived therr for almost 12 years. We would get coconut rice as prasadam in temples during pongal and navratri festivals.
Coconut rice is a vegan and Gluten-free free recipe as the main ingredients here is coconut.
You can give this in tiffin box for kids in schools. The coconut rice will be a mixture of coconut flakes, cashews and roasted peanuts and you will surely like this nutty flavour. Lets begin the recipe.. Let's get started...
Ingredients we need :
1.Coconut ( fresh )-1 cup( grated) or grinded.
2.Cooked rice-1. 5 cup
3.For tempering: Oil-1.5 tsp, Ghee-1 tsp,Urad dal-1 tsp, chana dal-1 tsp, peanuts -2 tsps, cashews -1 tsp, dried red chilli-2-3,curry leaves -10-12..
4.Masalas : cumin seeds( jeera)-1 tsp,mustard seeds-1 tsp, salt( as per taste), Green chilli-2-3 ( long slit), Asafetida-2 tsps, ginger-1 inch( chopped), cinnamon stick-2-3 pieces, black pepper corns-2-3,Bay leaves-2-3.
Preparation : Time taken-15-20 mins( serves -3 people)
1.Take a pan, add Oil and ghee and let it heat. Add mustard seeds, jeera seeds, dried red chilli-2,curry leaves-10-12,peanuts and cashews. Saute it well for 2 mins.Add bay leaves, black pepper corns and cinnamon sticks. ( optional)
2.Now add asafetida, Green chilli and grated ginger. Now add grated coconut and mix it well. Saute it well for 5 mins.
3.Add cooked rice and mix it well. Coconut rice is ready to be served as lunch.
4.Serve it as a tiffin box recipe.
Note:
1.If you feel that the taste of the rice is bland, you can add Lemon juice.
