Kaddu-Lauki pakoda: Unique evening snack!
Hey Blog members🙏🏻 Greetings!
Today I am going to share an easy recipe of pakoda/fritters. Well based on a real story, I had half bottle gourd and half pumpkin in refrigerator. Due to some reason they were left. As we know that we don't like both of them, I thought to make pakora from them. That's what the recipe is. I will also call this blog as leftover ka makeover.
Lets begin the recipe.. Let's get started :
Ingredients reqd:
1.Bottlegourd (lauki)-1/2
2.Pumpkin (kaddu)-1/2
3.Besan/Gram flour/-1 cup
4.Rice flour -1/2 cup
5.Green chillies-2-3
6.Onion-1( big size)-chopped finely
7.Cabbage-1/2( grated)
8.Masalas reqd : Salt( as per taste), Turmeric powder -1/2 tsp, Red chilli powder - 1 tsp, Garam masala-1 tsp, Coriander powder-1 tsp, Amchoor powder ( dry mango)-1/2 tsp, heeng-2-3 pinch, Ajwain (carrom seeds)-1/4 tsp, Chat masala -1 tsp, coriander leaves,saunf/ fennel seeds-1/2 tsp
8.Now take the bottlegourd and pumpkin, peel them and grate those veggies. Now just press and drain the excess water from the veggies.
9. Take a big bowl and add grated bottlgourd, pumpkin, cabbage and cjopped onion. Now add besan slowly and mix it well.
10.Add rice flour to the mixture and add the masalas like jeera, ajwain, red chilli powder, Amchoor powder, salt, garam masala.
11.Now keep the mixture at rest forn15 mins. After 15 mins, all the water will be soaked by besan and so add the besan and rice flour again accordingly. As some water will be realeased by the veggies. Adjust the consistency.
12.Take a non-stick kadai for deep frying the pakoras, Add oil and keep it on medium flame till its hot. Add the mixture in form of small balls into the hot oil and deep fry them.
13.Fry it well on both the sides on medium flame. And our lauki-kaddu pakoras will be ready.
14.Serve it with ketchup/ green chutney.
Note :
1.After making the pakoras and frying it in oil, just dont touch the pakoras as it will break. Let it float over oil and then flip it to other sides.
2.Add 2 tsp of hot oil to the mixture and so that our pakoras will turn out crunchy.
