Well in olden days in Rajasthan, less crops were grown so ladies used to make papad at home when guests came.Papad is basically made from moong dal/ urad dal. They are grinded and kneaded in dough form and then papad is made.
Lets begin:
Ingredients required :
1.Papad (2 )-Roasted / not roasted(as per choice )
2.Tomato -2(small size)
3.Green chili-2
Masalas required :
1.Cumin seeds(jeera)
2.Mustard seeds
3.Curry leaves ( well I add)
4.Heeng
5.Salt(as per taste)
6.Coriander powder, turmeric powder
7.Red chili powder
8.Sabzi masala(not necessary )
9.Garam masala
10.Kasoori methi: For garnishing

Preparation: (Time:15-20 mins)-serves 3 people.
1.Take 2 papads and chop the tomatoes and green chilli.
2.Now heat a kadai/pan and add 2-3 tspoons of oil, add jeera, mustard seeds, heeng and curry leaves.
3.Now let it crackle then add the tomato and green chilli, add salt and turmeric powder.
4.Now you can add the coriander powder and let the tomatoes get mushy and cook till the gravy leaves oil from sides.5.Now add the red chili powder ( I added less as we eat less)
6.Now add the water 1 glass( big size) and let the gravy boil.
7.Now roast the papads on gas stove( well its optional, you can add as it is by breaking it into small pieces)
8.Let it boil for 10 mins on medium -high flame so that the papad absorbs the gravy.
9.After 10 mins, our sabzi is done and then add the kasoori methi.
10.Our papad ki sabzi is done. Enjoy it with fulka/ rice.
