Amaranth / Chaulai leaves saag- Rich in magnesium!
Hey blog members! Today I am gonna share chaulai saag/ amaranth leaves.
Its similar to spinach and its found mainly in the Himalayan region and south coasts of India.Reddish/Beetroot color in nature.
Ingredients reqd:
1.amaranth leaves-1 pack
2.Onion-1 (medium size )
3.Tomato -1(medium size)
4.Green chili -1( finely chopped)
5.Ginger -1/2 inch (finely chopped )
Masalas reqd:
Cumin seeds, mustard seeds, Turmeric powder, red chili powder, salt( as reqd), coriander powder, sabzi masala(optional), garam masala
6.oil for cooking
Preparation : Time:20-25 mins( serves 2 people)
Steps :
1.First take the leaves and wash it thoroughly 3 times with water as it may contain dust particles.
2.Now take the leaves and chop them finely.
3.Now heat oil in a pan and add jeera, mustard seeds, heeng, green chili, ginger and onion.Add salt and turmeric to it.
5.Now cook the tomatoes till they get mushy.After they get mushy then add the chopped leaves to it and then steam it for 3 mins till all get steamed well by covering the pan.
6.Now after 3 mins, open and see and mix the leaves with the masalas and then cover it again for 7 mins till its fully cooked.
7.Now add the masalas, like coriander powder, garam masala and Sabzi masala
.
8.Our amaranth leaves saag is done.
9.If you have fresh coconut then grate it and garnish with it.
10.You can serve it with rice or roti.

2.Contains dietery fibre and vitamin c.
3.Good for digestion
4.Prevents anemia as it has high levels of iron and magnesium.
5.Its gluten free as it contains no fat.
