Vettu Cake: Eggless
Hey foodies🙏🏻 Welcome to another blog. Today I am sharing a recipe from South india. This recipe comes from Kerala which is vettu cake.
Vettu cake is similar to ooty varki. Vettu cake is sweetened dough which is deep fried. This is a tea- time snack in rural kerela. The original recipe is made with eggs.
As I am vegetarian, I made it eggless.The recipe is like a deep fried fritter.
Lets begin the recipe. Let's get started..
Ingredients needed:
1.Maida/ refined wheat flour-1 cup
2. Rava-1/2 cup
3.Powdered sugar-1/2 cup
4.Cardamom pods-4-5( grinded )
5. Ghee-1 tsp
6.Baking powder-1 tsp
Or
Baking soda-1/4 tsp+curd-1/4 cup
7.Milk-lukewarm-as needed./1/4 cup.
Procedure :
1.Take a big bowl, add maida, sooji, powdered sugar, baking powder/ baking soda +curd. Mix them well. Add elaichi powder.
2.Add 1 tsp ghee. Now knead a dough by adding lukewarm milk and the dough should be soft.
3.Now rest the dough for 20 mins. Thw dough should not bw sticky.
4.After 20 mins.Divide thw dough into 2 parts.
5.Take a part and roll into cylinder shape and the pieces as we cut when we make pooris.
6.Now take a piece and with the help of a knife, make a cross. The cross should not cut the piece but shape should retain.
7.Similarly take all the pieces and shape them like this.
8.Now take a non-stick kadai and add oil for deep frying.
9.Keep the flame low. Add the pieces one by one and fry them in low flame.
10.Fry them till golden brown.
11.You will notice that they will turn crunchy from outside and soft from inside.
12.They will remain good for 15-20 days well on room temperature.Keep them in air-tight container.
Our vettu cake is done. Enjoy it with tea/ coffee. Its like a cookie.

You can add more sugar acc to your taste.
Note:
If you add baking powder, add 1 tsp. If you add baking soda, add 1/4 baking soda and 1/4 cup curd with it. Otherwise they wont rise properly.
