Hello blog members🙏🏻Today I am going to share a vegan and gluten- free recipe made of rice flour. This recipe is mainly from karnataka and popularly known as "Akki roti". Akki means rice and roti means bread. Its a flat bread made of rice flour. Its quite a healthy recipe. Veggies are added accordingly. Well i decided to make it with leftovers. Lets see how this recipe turns out.Lets begin the recipe.. Lets get started...
Ingredients we need:
1.Rice flour-1 cup
2.Leftover coconut and green chutney-1 cup.
3.Veggies: chopped onion, carrot, coriander leaves, ginger( grated), chopped green chilli.
4.Masalas: red chilli powder-1 tsp, salt( as per taste), Cumin seeds-1 tsp.
5.Water for kneading the dough if needed.
6.Oil for baking.
Preparation:Time needed: 15-20 mins.
1.Take a bowl, add the leftover chutney, veggies ( carrot, green chilli, ginger,coriander leaves). Mix it well.
2.Now add rice flour gradually and mix it. Check whether it forms a dough. If it doesn't add water and form a dough.
3.Add red chilli powder, salt and Cumin seeds and form a dough.
4.Apply oil on the dough. And keep it at rest for 10 mins.
5.Heat a tawa or non-stick pan, add oil. Now take a piece of the dough and place on the tawa and spread it on hot tawa itself. And bake it till it gets brown and cruncy from both sides.
6.Our akki roti is ready. Serve it with tomato chutney. I served it with curd.
Points to be noted:
1.Add water only if needed as veggies have its moisture of its own.
2.You can add veggies like radish, bottlegourd, beetroot, pumpkin( grated), capsicum of your choice.
3.The dough when you place it on tawa should be medium flame and it should be sticky enough to spread it with hand. If its not apply some water and the spread.
4.The health benefits : Its a protein packed breakfast recipe and also gluten- free.
