Achari Kaddu : Magic of Indian Spices!
Hey Blog family! How you guys doing?
4.Now take all the achari masalas in a plate..
5.Take kadai/pan and add mustard oil and all the masalas..
6.Add the pumpkin after the oil is hot and all the achari masalas are fried well.
8.Cook till its fully soft, finally add Amchoor powder and sugar/gud and garnish it with coriander leaves/ kasoori methi.
Our Achaari kaddu is ready to serve hot with fulka ,roti ,parathas and even poori.
Well many of us don't like pumpkin(including me๐) because the taste of it is so bland. So thought of adding achari twist to the simple pumpkin. Lets begin the recipe๐ฉ๐ณ
Ingredients required:
1.Pumpkin - 250 gms
2. Mustard oil ( most important one)-2 tbspoons
3.Green chilies -2
4.Curry Leaves( if you wish)
5.Coriander for garnishing
Masala-e-magic :
1.Achari masala - Jeera(cumin seeds), Fenugreek(methi seeds), Onion seeds(kalonji), Fennel Seeds( sauf), Heeng,Amchoor(Dry mango powder), Bay leaf-2
2.Salt-as per taste
3.Sugar-1 tspoon( also jaggery(gud ) can be used)
4.Turmeric powder
5.Coriander powder
6.Red Chilli Powder
7.Garam Masala.
Let's Prepare: Preparation time: 20 mins.
1.Take the pumpkin and remove its seeds and peel it(the skinof the pumpkin will b hard to peel)
2.So these seeds can be preserved and used as they are agood source of biotin.
3.Cut the pieces of pumpkin in squares( not thin).
7.Pumpkin is easy to cook and cooks within less time with steam itself.
