Veg fried rice : Home style!
Hey Blog members! Today I am going to share veg fried rice recipe which is simple and homestyle.
History and origin :
Fried Rice:
Fried rice first originated from Sui Dynasty in China and all the versions are based from China. Its a dish made of cooked rice that has been stir fried in a wok or a frying pan and is usually mixed with other ingredients mainly vegetables : cabbage, carrot, beans, onion, garlic, ginger ( based upon your choice of vegetables ). Its mostly stir fried on high flame on high heat. Vegetables are not fully cooked, they must be crunchy.
Ingredients Reqd :
1.White Rice (long grain/ short grain)-1 and half cup
2.Oil for cooking
3.Salt - as rqd
4.lemon -1/2
5.Veggies : Capsicum-1(medium size), Carrot -1(big size), Onion-1(big size), Garlic-4-5 pods( finely chopped), Ginger-1/2 inch(grated), Cabbage-1/4( finely chopped),Green chilli-2-3( finely chopped), French beans -high
chopped)
6.Dark soya sauce-1 tsp
7.Chilli Vinegar-1 tsp
8.Black pepper-6-7( crushed well)
9.Red Chilli powder(kashmiri lal) / Red chilli sauce-1 tsp
10.Coriander leaves and mint leaves(finely chopped).
Preparation( Time taken: 40-45 mins)
1.Take the white rice ( be it basmati/short grain). I use sona masoori rice. Soak it for 20 mins and keep it aside.
2.Now chop all the vegetables ( capsicum, beans,onion, garlic, green chilies, ginger, cabbage).Chop them finely.
3.Take a big utensil and add water and let it boil for 10 mins, after 10 mins, add the white rice. Add 1/2 lemon juice, salt and few drops of oil into the boiling rice.
4.Cook it for 10-12 mins. And take them out and add cold water to the rice. Now dry the water of the boiled rice.
5.Take a wok/ kadai. Heat it on high flame.
6.Add oil in the wok/kadai and add the onion, green chillies and garlic. Stir it well. Slowly add the other veggies and cook it for 5-7 mins on high flame.
7.Now after cooking the veggies ( should be somewhat crunchy )
8.Add the boiled rice to the veggies. Add the dark soya sauce, chilli vinegar and red chilli powder/red chilli sauce to the rice. Add crushed peppercorns to the rice and mix it well. Add the salt while the veggies are cooking.
9.Check the salt acc to the taste. Add the coriander and mint leaves for garnishing. Our fried rice is done.
10.You can enjoy it as it is. We enjoy it with vegetable rayta /simple curd.
Note:
1. In fried rice the rice should be seperated as each grain should be seen.
2.Add the lemon juice for that.
3.Add oil / ghee so that the rice do not stick to each other while boiling it.
